These are wild caught North Atlantic scallops sourced from a small family business in New England we have partnered with for many years. The scallops come right off the company’s boats and are dry processed and flash frozen within hours.
‘Dry’ processing uses no preservatives or artificial methods to preserve the quality of the scallop (as opposed to ‘wet’ harvesting that you find in some supermarkets – the glossy plumpness is from preservatives and carrying additional water weight). Dry scallops are ideal for searing and taste (almost) as good as freshly shucked on the boat.
Flash freezing uses cold temperatures to maintain freshness, preserve nutrients and protect the product from external impurities.
We have been sourcing and selling quality protein for over 30-years and are constantly searching for quality suppliers. If there is a source of higher quality North Atlantic scallops processed with both love and skill, we have not found it.
